Instructions
Melt butter in a medium skillet over medium low heat. Once butter has melted and started to bubble, add the onions and 1 teaspoon of the salt
Allow the onions to caramelize. Stirring occasionally to ensure even cooking. This will take about 30-35 minutes. After about 20 minutes of cooking, deglaze the bottom of the pan by adding the beef broth and using the wooden spatula to scrape all of the brown bits from the bottom of the pan. The liquid will cook off quickly.
While the onions are caramelizing, combine the Greek yogurt, remaining salt, Worcestershire sauce, and umami seasoning and place in the fridge.
Once the onions are a deep brown and caramelized remove from heat and allow to cool for 5-10 minutes.
Add the cooled onions to the Greek yogurt. Allow the flavors to merry in the fridge for 30 minutes.
While the dip is in the fridge, remove the stems, half and core the mini sweet peppers.
Serve the dip with the sweet peppers as you would chips.
