HIH is BACK! Back with the blueberry smoothie you didn’t know you needed in your life. Or, maybe you did and my return to blogging is perfectly timed! Did I want to do a big fun back to blogging post, you bet! But, your girl is booked and busy these days. So, let’s just keep it simple and pick right up where we left off! Thanks for being patient while HIH HQ got a facelift.
This blueberry smoothie has been the kick start to my day for quite a while now! I needed to get more protein, fiber, fruits, and veggies into my diet, so I started looking for smoothie recipes to get it all in one easy glass. The only problem is, I’m not really a smoothie person and I’m FORE SURE not a green smoothie person. I’ll save the spinach and kale for salads. So, this one was a challenge. I tried quite a few different combinations before I landed on this one!
Recipe Evolution
We all know cauliflower has had a major glow up over the last few years and while I’m not typically on the cauliflower substitute train, it’s PERFECT in this blueberry smoothie recipe! Cauliflower is high in nutrients such as vitamin C, vitamin B6, vitamin K, folate, potassium, magnesium AND high in fiber. If you take a look at what many modern diets are deficient in, that list will check off quite a bit! It also keeps the smoothie from being that nasty green color. Big win, especially if you’re hiding veggies from kiddos!
I talked all about the health benefits of blueberries in the Sweet Potato Blueberry Muffin post. In short, I picked blueberries because I love blueberries. The fact that they’re a super food packed with nutrients, fiber, and antioxidants is a huge bonus. When you add in the cauliflower, chia seeds and whole flax seeds this blueberry smoothie recipe is gives you over half the fiber intake you need for the day! I know we’re all struggling to get in that fiber from whole foods!
Now, I’m going to let all of you in on the BEST protein powder I’ve EVER used. As a semi-retired fitness fanatic, I’ve tried about every protein powder around. I also haven’t been a huge fan of very many. For this smoothie I use the Just Ingredients protein powder in their plain flavor. It’s just slightly vanilla-y, but doesn’t in anyway over power the flavor of the blueberries. All of the flavors are AMAZING and there aren’t any weird extra ingredients. The plain flavor is also the PERFECT coffee creamer.
Why water?
Just one more thing and I’ll get to the recipe! Why did I use water as my liquid instead of some type of milk? While packed with healthy ingredients, this is a relatively calorie dense smoothie. If water get’s the job done, why go with anything else? We all need more water each day! Or, is that just me?
Personal blenders like the SUPER CUTE ONE I gifted myself after HIH HQ was finished up, will thrive when there’s plenty of liquid to prime the blend. If you want to sub in your favorite type of milk or milk substitute go for it, it’s your smoothie!
Without further ado – here’s my favorite blueberry smoothie recipe. Enjoy!
