While many of us are focused on the holidays, if your house is anything like mine, the holiday season is also hunting season. Now that I’ve shared plenty of Fall recipes with orange, sage, cranberries, butternut squash and sweet potatoes fit for your holiday table, I figured I should also share a recipe round up from our Field to Table recipes.
Duck, venison, goose, elk, and moose have all found their way into my kitchen. If your household has been blessed with punched tags and full freezers, I hope this recipe round up will bring deliciousness from the field to your table!
Sheet Pan Meatloaf with Sweet and Zesty Glaze
This is one of those great for any ground meat you have in the freezer recipes! I created this to have plenty of moisture. Even super lean game meats will come out delicious, moist and tender! Bonus, you can use the HIH beer bread recipe to make meatloaf sammies!
Sous Vide Wild Duck Breast with Blue Cheese + Black Pepper Cream
This one’s for when you want to get a little fancy! This preparation of duck is a staple when we’re hosting at HFO throughout duck season. Duck hunter’s have often given this the “best duck I’ve ever had” award!
Oven Baked Meatballs
I’ve been asked if I ship these meatballs several times when serving at HFO. That’s how good they are. Whether you’ve got venison, elk or moose, these meatballs will be sure to please! You could also use beef, or other red meats, but that’s not the theme of this post. 😉 BONUS – these freeze AMAZING. I make dozens of these meatballs ahead of hunting season and freeze them for nights when I have less time than I’d like to feed the hungry hunters at HFO!
Wild Goose + Gruyere Tart
Another recipe perfect for entertaining with game meat. The recipe is specifically mentions goose, but you could certainly substitute duck as well. This is one of my favorites! I always get some “ooooos” and “awwwes” when I set one down on the table.
Elk Tenderloin + Blackberry Bourbon Sauce
Hello date night! If your honey has been a little perturbed about the amount of time (or money) you’ve spent on the hunt, I’ve got you. Whip this up for a special date night to show your honey how much your appreciation! This would also be a fantastic with venison tenderloin or backstrap.
Elk Casserole with Green Chile Cheese Cornbread Topping
Casseroles are the heroes of feeding a crowd of people. If you’ve got a crew coming over, this recipe is a real winner! I’ve written this recipe for elk, but as with many of the other ground game meat recipes on HIH, you could substitute venison. My mother makes this and freezes it! It’s also FAN-FREAKING-TASTIC warmed up. Don’t be afraid to top with with a little extra green chile salsa! Winner winner, game meat dinner!
Super Simple Red Meat Chili
Whatever meat you’ve got in your freezer, this chili recipe is a darn good one. As written, I would call this a medium spicy chili. You could tone down the heat or turn it up depending on the taste. Bowls are always clean when this is on the menu!
