I’ve taken my love of brown butter and bacon to create an elevated take on the traditional version with this brown butter bacon rice crispy treat recipe!

Recipe Evolution: Brown Butter Bacon Rice Crispy Treats
Is there anything wrong with a traditional rice crispy treat? No, of course not, but variety is the spice of life and I think these little upgrades make for an extra special result.
It’s no secret, I’ll add brown butter and bacon in anyway I can. The reining all-time number one recipe on Honey, I’m Hungry is my Brown Butter Bacon Chocolate Chip Cookies. In fact, every cookie recipe on HIH includes brown butter! If you type “brown butter” in the search bar on the HIH recipes page, more recipes than you can count on your fingers and toes will pop up!
If a traditional recipe calls for melted butter, you can probably bet I’m going to see how taking the extra time to brown the butter. I have yet to find a recipe that didn’t taste better with brown butter! It just adds that something extra and makes even the simplest of recipes really taste homemade! For me, bacon is one of my favorite ways to adding two elements to a recipe. First, a salty component and also a textural component. That’s exactly what bacon does for these rice crispy treats! By adding bacon, you’ll add extra texture and a saltiness taking traditional rice crispy treat to the next level! I also have a whole How-to-Do post on creating perfectly rendered bacon bits.
Keys to Success
- Get the bacon crispy! I put a note in the recipe to prepare the bacon however you prefer. While I like the method found in my bacon bits post, you can certainly fry whole strips or even bake whole strips and chop after if that’s your preference. However you cook it, just make sure it’s crispy! If you’re short on time or free hands, the I’d just pop the bacon in the oven, set a time, and go check another item off my to-do list while it cooks. Do what’s best for you!
- Press the mixture firmly into the pan. If you want perfectly shaped rice crispy treats, you’ll want to make sure you press the mixture right into the corners of your 9″x13″ pan. I like to finish pressing the mixture by placing a sheet of parchment paper over the top and then using a loaf pan to slide over the top to get it perfectly flat.
- If you prepare the bacon in the oven, make sure you add a tablespoon of bacon grease into your pot with the butter. It really amps up the bacon flavor! Bacon grease should never be wasted!
- I prefer a pan with square corners vs rounded corners. Using a pan like this one, with very square corners will result in all of your treats having square corners. If you use a glass baking dish, the outside corners will be rounded and the treats won’t all be uniform when you cut them.
- LET THEM COOL! Warm rice crispy treats won’t remove from the pan very cleanly and they are also very difficult to cut. Sometimes, if I am in a hurry I’ll pop the pan in the fridge for 20 minutes before cutting.
Brown Butter Bacon Rice Crispy Treats
Equipment
- 1 large pot
- 1 Rubber spatula
- parchment paper
- large measuring cup
Ingredients
- 8 tablespoons salted butter 1 stick
- 8 cups crispy rice cereal
- 8 cups mini marshmallows
- 8 strips thick cut bacon, cut into small bite sized pieces
Instructions
- Prepare bacon to crispy using the large pot. Remove from pan and allow to drain on a paper towel. Remove all but about 1 tablespoon of the bacon grease from the pan. ***I like this method, but you may prepare the bacon to crispy any way you like.8 strips thick cut bacon,
- Using the same large pot, over med-low heat, add the butter to the bacon grease. While stirring often, allow the butter to cook until it becomes an amber color. See blog post for tips on making brown butter.8 tablespoons salted butter
- Add the marshmallows and the bacon to the brown butter, stirring with the rubber spatula until fully melted.8 cups mini marshmallows, 8 strips thick cut bacon,
- Gently fold in the crispy rice cereal until just combined.8 cups crispy rice cereal
- Once your cereal is incorporated into the marshmallow, bacon mixture, gently press into a 9"x13" pan and allow to cool completely.
