I LOVE egg salad, especially for lunch on a hot summer day! I don’t love hard boiling eggs. If you don’t love hard boiling eggs, it’s hard to want to make homemade egg salad. Even an easy egg salad that’s full of flavor, but light on calories isn’t enough to persuade me more often than not. Thankfully, I found a game changing method to prepare eggs for egg salad using a millennial favorite, the air fryer.
While we were on vacation this summer with our good friends Caitlin and Brad, they were explaining to me how they use their air fryer to “hard boil” eggs. I was immediately interested. I never even thought to use an air fryer to cook eggs in the shell! When they told me eggs came out perfectly cooked and extra easy to peel, I knew I had to try it…and make egg salad for HIH.
Not only is this recipe delicious, it also lands on the Honey, I’m Healthier page, with 20g of protein packed in to just 210 calories. If you’ve been around HIH long, you know I’m a fan of swapping mayo for greek yogurt when I’m looking to lower fat and increase protein without compromising texture. I swapped the mayo out of the HIH Pantry Ranch for a lighter, but equally delicious ranch dressing. Of course, if you wanted to substitute the greek yogurt for mayonnaise in keeping with a more traditional egg salad, go for it. Even better if it’s HIH homemade mayo!
It’s true. I was anti-air-fryer.
I’ve had an air-fryer for years, but it rarely made an appearance. I even did a pellet grill vs. air fryer buffalo wing experiment with expectation it would convince me of the convenience of the air fryer. The pellet grill was so much better, my old air-fryer has been in it’s basement cubby ever since. I simply just preferred my traditional oven, pots, pans and pellet grill. Until now.
I cook for crowds more often than not, so cooking in a standard sized air-fryer wasn’t practical. My air-fryer wasn’t standard, it was the size of and had resemblance to some sort of space traveling vessel. Not something you’d want on your counter top. I had all but given up on being an air-fryer fan. Enter, the Beautiful by Drew Barrymore air-fryer from Walmart.
After learning the secret to the perfect hard boiled egg wasn’t a pot of boiling water, it was an air-fryer, I was convinced to give the air-fryer another shot. I guess I really like hard boiled eggs. For me, a new air-fryer had to be large enough to feed all the hungry mouths during hunting seasons, but, still sized to fit on my countertop and aesthetically pleasing enough to live there full-time. Oh, and of course it had to air-fry food to perfection. It took many Google searches and trips to Walmart, but I finally found one that checks all the boxes!
When I saw the Beautiful by Drew Barrymore line at Walmart, I loved the aesthetic so much I immediately thought, there’s no way those products can work as good as they look. Well, HIH readers, I’ve found the air-fryer that checks all the above boxes. BONUS, it comes in TWO sizes!
Now, that’s an air-fryer I’ll proudly place on my counter. I, of course, purchased the larger one, and I’ve used it almost every day since it made it’s home on my counter. The larger version has the option to split the basket to cook two different foods at two different temperatures and two different times. Can your air-fryer do that? I can’t comment on longevity yet, but it does come with a two year warranty. The most consistent concern in reviews across the line was the white icing color discolors quickly. Which honestly, makes sense. High heat and white aren’t typically the best pairing. If you’re looking to add or upgrade an air-fryer, your search is over. Snaps for Drew!

There’s only one this week; this recipe is pretty foolproof and so easy!
- Pick the crunchy mix-in that makes you happy! Sometimes I want a kick and add jalapeño, others a sweet bell pepper gets the job done. More often than not, I’m stirring in some crispy bacon bits. That’s my favorite way to enjoy egg salad. Really what I’m saying, is take this basic egg salad recipe and make it your signature egg salad with the crunchy mix in that makes your tastebuds happy! Variety is the spice of life!
Easy Egg Salad + Air Fryer HBE
Equipment
- 1 air fryer
- 1 medium mixing bowl
- Measuring cups and spoons
- 1 tongs for handling hot eggs
- 1 chef's knife
- 1 egg slicer
Ingredients
- 6 large eggs
- ¼ cup non-fat greek yogurt
- 1½ teaspoon yellow mustard
- 1½ teaspoon dill or spicy pickle brine
- 1 teaspoon salt
- 1 teaspoon black pepper
- ¼ teaspoon cayenne pepper, optional
- 1 tablespoon finely diced crunchy mix-in red onion, green onion, jalapeño, sweet bell pepper, pickle relish, bacon, etc.
Instructions
- Air fry 6 large eggs at 280°F for 15 minutes.
- While the eggs are cooking, combine all other ingredients in a medium mixing bowl and stir together, cover and set aside in the refrigerator.
- Once finished cooking, allow the eggs to cool or run under cool water until cool enough to handle. Peel the eggs and slice or chop into the desired size/texture for your liking.
- Add the eggs to the yogurt mixture and stir to combine. Taste, add salt and/or pepper if necessary.
- Can be served immediately, but will develop the best flavor after at least an hour in the fridge.
